I recently posted how Christmas seems to start earlier and earlier in the past few years. With all of those holiday goodies everywhere, it’s so easy to fall off the wagon and binge on Christmas cookies, cakes, and candies.
I totally believe in eating what you want but in moderation. During the weeknights I tend to cook more at home and stay within my Weight Watchers points range. That gives me wiggle room to indulge a bit on the weekends.
I hate cooking. Like really hate cooking. So when I do cook at home it HAS to be easy and fast. It also has to be healthy and within a decent amount of SmartPoints.
This is an easy, fresh, and super healthy meal perfect for busy nights. Especially those late nights during the holiday season where you are out running around shopping! I get a bag of Fresh Express Cesar Salad Kit with Greek Yogurt Dressing and a box of Gorton’s Classic Grilled Salmon. This meal is about 6 SmartPoints.
Grilled Salmon Cesar Salad
So to recap, here’s what you need:
- Gorton’s Classic Grilled Salmon – It’s 2 SmartPoints for one filet or 3 points for both.
- Fresh Express Cesar Salad Kit with Greek Yogurt Dressing – 3 SmartPoints for 2.5 cups.
There is an entire line of Gorton’s Smart Solution products. These include many options that are grilled and under 200 calories. As a working mom, I don’t have a ton of time to cook so I love having frozen options I can trust and depend on in a hurry.
The grilled salmon comes frozen and it requires about 15 minutes in the oven at 400 degrees. While that is baking I mix the salad together in a large salad bowl. From there, you can portion it out into individual bowls.
Once the salmon is done, take it out of the oven and top your salad with it. Seriously it’s that simple.
It is delicious and definitely in our weekly meal rotation!
